Cornish Blue cheese is an award winning full fat cream cheese made with cows milk from the Stansfield family farm on the edge of Bodmin Moor. Cornish Blue has won several awards, most notably in 2010 Cornish Blue became the World Champion Cheese!
The Cornish Cheese Co. use a simple production process, which is carried out entirely by hand, and relies on the their skilled cheesemakers. The milk comes from their own cows which feed on the pasture on Bodmin Moor.
The combination of the farm, the cows, and the milk all make Cornish Blue a very popular artisan cheese. Once the cheeses are made they enter the maturing room where they stay for 12 to 14 weeks to enable them to achieve their full character and flavour.
Vegetarian rennet and special starter cultures are added to the milk to make the cheeses, which are dry salted by hand before being left to mature for between 12 and 14 weeks.
The blueing occurs with a little help from nature and by piercing the cheeses each week with stainless steel rods which let in air, this helps the blue mould spread right through each cheese.
